Breakfast is the first thing an itinerary sacrifices. It is the thing we protect most.
Dinner gets the ceremony, lunch gets the hurry — and breakfast? Most itineraries surrender it to the hotel buffet. We do not.
The key of the day
Breakfast sets the key a day is played in. A twenty-minute detour for fresh-made soba buys you not the bowl, but the suggestion that today is not a day for rushing. That suggestion changes your walking speed for the next ten hours.
So on our itineraries, breakfast often has a name, an address, sometimes a reserved seat. It is part of the design, not the blank space between designs.
